The consortium brings together several producers of the Amarene Brusche di Modena PGI: the jam made from the fruit of Prunus cerasus plants, commonly known as “sour cherry”.
In fact, this typically Emilian product is characterised by a peculiar sour flavour, which clearly distinguishes it from other jams.
Amarene Brusche di Modena PGI jam is ideal for preparing shortcrust pastry cakes and tarts. It can also be enjoyed au naturel, as a dessert at the end of a meal, and is very popular with ice cream.
The sour cherry tart, with a short pastry base and a topping of sour cherry jam, is a typical Modenese dessert. The combination of the extremely sweet flavour of the shortcrust pastry with the tartness of the topping gives this cake a unique and unmistakable characteristic.
