Consorzio del Prosciutto di Modena

The Consorzio del Prosciutto di Modena (Prosciutto di Modena Consortium) was established on a voluntary basis on 6th October 1961; the intense activity of the producers and the undisputed quality of the product led to the coveted European recognition of the Protected Designation of Origin (PDO).

The Consortium holds the Production Regulations, deposited with the European Union for the recognition of the PDO, which regulates the entire production process of Prosciutto di Modena, giving rise to a complex and articulated control system over the entire supply chain.

These regulations set out in detail the requirements for the raw material, the supply and processing areas, the production techniques and the controls aimed at certifying the production and authorising the affixing of the protection mark at the end of the maturing process. The Consortium is also entrusted by the Ministry of Agricultural, Food and Forestry Policies with the task of supervising the marketing of the product in accordance with the provisions of the law through its supervisory agents.

The Consortium's activities are also aimed at promoting, enhancing and disseminating knowledge of Prosciutto di Modena in Italy and abroad through an on-line and off-line communication strategy and participation in national and international trade fair events.

The Consortium is also committed to maintaining, safeguarding and improving the organoleptic and nutritional qualities of the product, and to providing the consumer with correct information on its guarantees and characteristics. In addition to this, it is committed to assisting member companies through technical-productive consultancy activities, implements initiatives aimed at promoting and protecting the product, and regulates matters of common interest for all those involved in production.

Today the Consortium brings together the producers of Prosciutto di Modena PDO. It is a niche product; in fact, the 10 prosciutto producers which are members of the Consortium cure an average of 70,000 protected designation of origin prosciutti hams each year.
